Dr. Diaz-Beltran is an associate professor at the Nutrition and Biochemistry Department. She is credentialed as a Registered Dietitian Nutritionist (RDN), ServSafe® Certified Instructor and Registered Proctor. Her teaching expertise lies in foodservice management, nutritional quality and consumer eating behavior reactions.

Dr. Diaz-Beltran´s research focuses on food environments and food choices, specifically in the restaurant´s nutritional environment, menus, and how foodservice initiatives may impact consumer health and a sustainable planet.
