Resumen
Panelitas de leche are a product obtained by evaporating a mixture of milk, flour, and sugar. There are also varieties where the milk has been curdled prior to the panelitas de leche production or others in which the sugar is replaced by molasses and honey, obtaining a kind of chewy candy. Its consistency is moderately hard and dry; some varieties are gritty and brittle. In this chapter, the existing information on panelitas de leche is reviewed. The production process of this product is presented, as well as the importance of its raw materials and the possible defects of the final product. Finally, a study on the sensory characterization of panelitas de leche is presented, which can serve as a basis for the characterization of these products, mainly in small companies.
