Abstract

Background: food-borne diseases represent a major public health problem; they affect the gastrointestinal system and are caused by eating food contaminated by pathogenic such as Listeria monocytogenes, Salmonella enterica among others. The industry has implemented mechanisms to prevent unwanted foods proliferation of microorganisms. Lactic acid bacteria as Propionibacterium freudenreichii (LAB), have been reported to exert antimicrobial activity by the action of organic acids, hydrogen peroxide and propionicina F peptides as well as their probiotic effect. Metabolites produced by LAB as nisin, offer a bioprotector effect on ensuring foodsafety in foods. Objectives: The aim of this study was to evaluate the antimicrobial effect of bacteriocin-like substance produced by P. freudenreichii subsp shermanii in vitro and a meat matrix. Methods: For the purification of the bacteriocin was followed to method of Todorov 2010, using as a positive control extract Le27 Lactobacillus plantarum strain previously characterized (2014 Amórtegui et al, 2014). Subsequently the antimicrobial activity of the extract was evaluated by the agar diffusion method, in co-culture and purified on a meat matrix against Salmonella enterica ATCC 13076 and Listeria monocytogenes ATCC 13076. Conclusions: The antimicrobial activity of the bacteriocinlike substance of Propionibacterium freuderenchii no showed inhibitory activity. The extract unneutralized (propionic acid) in the culture and in the meat matrix reduced 2 UL of L. monocytogenes in culture and after 15 days of test conditions simulating cooling previously inoculated ham. S. enterica no reduced or not growth inhibited activity was observed. The results show the potential of P. freudenreichii for inhibition of pathogens of interest to the food industry.
